Total Time: 1 Hour 20 Mins
Ingredients:
3 Chicken Breasts
1 Bag Frozen Broccoli
3 Large Potatoes
1 box of refrigerated pie crusts
1 can Cheddar Cheese Condensed Soup
1 jar Cheese Sauce
1 C Shredded Cheddar Cheese
1/2 Tsp Salt
1/2 Tsp Pepper
1 Tsp Garlic Powder
1 Tsp Onion Powder
1 Tbsp Oil
Instructions:
Preheat oven to 425 degrees
Peel and dice potatoes then throw into a pot of water to boil.
Dice up the chicken and season with salt, pepper, garlic powder, and onion powder.
Cook the chicken in a pan with oil. This should take about 10 minutes on medium heat. You'll know when it's done when your chicken is no longer squishy and has a more stiff texture when you push on it.
Once your chicken and potatoes are cooked in a large bowl combine the chicken, potatoes, broccoli, cheese soup, and cheese sauce. Mix until everything is evenly distributed.
Grease up a metal or glass 9" pie dish.
Unroll the first pie crust and place it in your pie dish.
Take a fork and stab the bottom of the pie crust all over.
Dump your chicken, broccoli, potato mixture into the pie dish.
Sprinkle a thin layer of cheddar cheese over the top
Unroll the second pie crust and place on top of your pie dish. Use a fork to squish the bottom pie crust and the top pie crust together along the edge of the dish.
Use a sharp knife to trim any excess crust that hangs over the edge.
Cut a few slits into the top of your pie crust. Go crazy and add a design!
Bake in the oven for 35-45 minutes.
Remove from the oven once the crust is golden brown.
Let rest for 5 minutes before cutting.
Enjoy!
Sometimes when I'm feeling lazy I will make this in a deep pan then put a pie crust on top and throw it in the oven. This is also great for those that don't like all that crust. You could also make the filling and bake the crust cut up into pie slices to put on top of the filling in a bowl. You could even make mini pot pies in a muffin tin!
