Chicken Cordon Bleu Casserole

Chicken and ham swimming in a melty, creamy, cheesy sauce under a blanket of warm pillowy stuffing.

Ingredients:

1 Rotisserie Chicken (deboned and diced)

1 8oz package Diced Ham

2 Cups Swiss Cheese (shredded)

1 Can Cream of Chicken Soup

1 Box Stuffing Mix (prepared)

1/3 Cup Water

Instructions:

  • Preheat oven to 350 degrees.

  • In a bowl, combine the Rotisserie Chicken, Diced Ham, Cream of Chicken Soup, and Water. Mix until everything is evenly distributed and coated in the Cream of Chicken Soup.

  • Put the mixture into a greased oven safe dish and spread evenly.

  • Sprinkle half of the Swiss cheese over the mixture.

  • Add the Stuffing and spread evenly over the top.

  • Sprinkle the rest of the Swiss cheese over the stuffing.

  • Cover with foil and bake for 45 minutes.

  • Enjoy!

This is a favorite for wintertime in our house. Sometimes instead of Rotisserie Chicken I'll use 2-3 Chicken Breasts diced up and cooked. I often make this after a holiday where I have left over stuffing and ham. Most of the times we have leftovers and it makes for an excellent warm lunch the next day.
