Serves: 4

Total Time: 35 mins
Ingredients:
2 Chicken Breasts (Halved)
1 8oz block of Cream Cheese
1/4 C Heavy Cream
1 1/2 C Chicken Broth
1 bag Frozen Spinach
1 Tbsp Italian Seasoning
1 Tsp Red Pepper Flakes
6 Cloves Garlic (Minced)
1 Tsp Salt
1 Tsp Pepper
1 Tsp Garlic Powder
1 Onion (diced)
1 Tbsp Oil
2 Tbsp Butter
1 box Penne
Instructions:
Halve your chicken breasts and cut off any gross bits.
Season the chicken with salt and pepper.
In a pot bring water to boil for your penne.
In a deep pan on medium high heat add the oil and chicken to the pan. Cook until the white (cooked chicken color) has moved up from under the chicken to the sides of the chicken.
Flip the chicken when the bottom starts to get golden brown. When your chicken has reached temp remove from pan and set aside. I do not use a thermometer for this. When the chicken is stiff and not squishy is how I can tell that its done.
Add your penne to the pot of boiling water.
Add the onions, garlic, and butter to the pan and turn the heat down to medium.
Use the butter to start scraping the bottom of the pan while you stir the garlic and onions around to coat them evenly. Be kind to your pan! Use a silicone spatula or wooden spoon.
Check your penne!
When the onions are translucent add the red pepper flakes and Italian seasoning. Stir to evenly distribute and let cook for about a minute.
Add the broth and turn the heat back up to medium high. Give the broth a minute to start bubbling then scrape the remaining bits from the bottom of the pan.
Add the block of cream cheese, heavy cream, and garlic powder to the pan.
Whisk until the cream cheese has melted and all the lumps disappear.
Strain your penne.
Add the frozen spinach to your sauce. If you are using the block of frozen spinach thaw it under some water first.
Stir until the spinach is thawed and the sauce starts to bubble.
Add the chicken to the sauce…or don't. your call!
Remove from the heat and Enjoy!
